Rich with vanilla and a hint of cocoa, these pretty delights are so mushy that it will be hard to resist them.The cream cheese frosting on the top compliments the dessert well 😀 😀
Here’s how to make it :
Makes 8 Cupcakes
120 grams Self Raising Flour
8 grams Cocoa
124 grams Caster Sugar
1 tsp Salt
140 grams Unsalted Butter
2 Tbsp Buttermilk
1 Tbsp Red Food Color
1 Tbsp Vanilla
1 Tsp Baking Soda
For the icing
74 grams Unsalted Butter
120 grams Cream Cheese
420 grams icing Sugar
In a large bowl, seive out self raising flour, cocoa, caster sugar and salt.Stir the dry mix with help of whisk so that it blends well.
Add butter and eggs one by one.Whisk together so that mix is lump free.
Add red food color to the butter milk and pour it in the batter.Mix with hand blender.
Add vanilla essence and baking soda.Blend.The cupcake batter is ready.
Fill in the batter in the muffin stand lined with muffin paper.
Bake at 170°C for 25 minutes
For the cheesecake icing
In a large add butter, cream cheese and icing sugar in the batches of two.Blend well to get a fine lump free icing.the icing should not be too flowy nor too thick.
Apply the cream cheese frosting over the cooled down cupcakes and sprinkle with sugar balls.Serve!!
