Pani puri is one of the most popular street foods of India.Be it young or old, all love to dwell in the fun and tangy flavors which it brings along.The crisp puri with tangy filling and spicy water is a worth trying if you ever happen to visit India – The land of spices 🙂 However,if you can’t visit here, we bring to you easy to follow recipe from scratch so that you can prepare this ultimate delight at you very own homes and enjoy 😀 😀
For the dough (puri)
1 Cup Whole Wheat Flour
1/4 Cup Semolina
1 Tsp Baking Powder
For Spicy Water :
Roasted Cumin Seeds
Dry Mango Powder
Fried Gramflour balls (Boondi)
For the filling
In a food processor, mix together whole wheat flour,semolina and baking powder.Gradually add water and let the mix combine to form a firm dough (not very tight, not very loose).Cover the dough with damp cloth and let it rest for 30 minutes.
Flatten the dough with the help of rolling pin and cut out small circles with the help of any round object.
Flatten the small circle such that the edges are thin and the center part is thick.
Heat the oil and deep fry the flattened circle.Press it with help of sieve spoon ( to puff them up) and fry till they are golden and crisp.Remove and place them on tissue paper to soak excess oil.
For the filling :
In a large bowl, mash the boiled potatoes.Add chopped onions, pepper,paprika powder and salt.Mix well.
For spicy water :
Blend together fresh mint leaves,coriander leaves,tamarind pulp, green chilies, long pepper and roasted cumin seeds to form a paste.
Pour the green paste in a tumbler and add tamarind water to it.Further add Asafoetida,Black salt, pepper,paprika and dry mango powder.Stir to eliminate the lumps.Garnish with bondi.
Chill the spicy water before serving for ultimate pleasure
Final assembly :
Crack the top of puri .Stuff it up with the potato filling.Dip it in the spicy water to fill it up and enjoy the ultimate flood of flavors in your mouth 😀 😀 😀
